Bell peppers are part of the genus Capsicum and include a gamut of chilli pepper species. Though they are native to Central and South America, China is the world’s largest producer and distributer of bell peppers. Bell peppers are rich in antioxidants and vitamins.
The most common colours are green, orange, yellow and red – though rare varieties of white, brown and purple exist as well.
All unripe bell peppers begin as green on the plant. The colour changes from green to yellow, orange and red the longer it is allowed to mature on the plant. Green peppers feature a bitterer flavour profile.
Orange and yellow are sweeter with the sweetest being the red bell pepper.
